Step 1
Marinate tilapia filets and shrimp in olive oil, salt, pepper and lime juice for 30 minutes.

Step 2
Once marinated, grill filets and shrimp until fully cooked. This should take approximately ten minutes; cook each side until it is golden brown. Set aside.

Step 3
To make the tomato and avocado salsa, combine tomatoes, avocado, onions, cilantro, lime juice and salt. Toss to combine. Set aside.

Step 4
To arrange the bowl, use either a base of salad greens or cauliflower rice. On top, add fire-roasted corn, tomato and avocado salsa, cherry tomatoes, sliced red onions, jalapeño peppers and Stacy’s Cheese Petites White Cheddar with Jalapeños. Add grilled tilapia and shrimp on top and garnish with lime.
